Ready to enjoy some football, food and great commercials for Super Bowl XLIV? (That’s Super Bowl 44 for those of you who don’t remember your Roman numerals.) The big game will be here soon which means it’s time to prepare the game day menu. Don’t worry about being fancy, but you will want some tasty treats in case the half-time show leaves something to be desired. Potato Skins - Potatoes are one of the cheapest foods you can buy. Buy a few big baking potatoes, scrub them up and poke them with a fork. Bake them at 350 degrees for 45-55 minutes. You’ll know when they’re done when you can easily pierce them with a fork. Let the potatoes cool enough so you don’t burn your fingerprints off when handling them. Cut the spuds lengthwise and scoop out the pulp. Replace the pulp with your favorite ingredients—think butter, salt, onion powder and cheese. Bake them for a few more minutes and serve up with some sour cream or blue cheese dressing.
Quesadillas - Cheese is pretty much one of the major food groups of any Super Bowl party. Whip up some quesadillas for your guests by layering some cheese in between two tortillas and zapping it in the microwave.
